Turkey Shepherds Pie 🦃🥧( Topped with white and sweet potatoes 🍠) A Thanksgiving meal.

You have no time to cook an entire turkey 🦃 for Thanksgiving. Not to worry. We will show you a quick and easy alternative meal, all the while still keeping with Thanksgiving tradition.
This meal has all the Thanksgiving flavours all in one dish ! A warm comfort “hug in a dish” that you can also prepare ahead of time and ready to pop into the oven on Thanksgiving Day. 🦃🥧🍁🍂
INGREDIENTS FOR THE MINCED TURKEY
MEAT: 3 lbs. of minced turkey meat
3-4 large carrots 🥕 (finely chopped)
3-4 large celery sticks (finely chopped)
One medium sized onion (finely chopped)
2 cups of corn 🌽 (or frozen peas 🫛)
1 tablespoon of garlic powder 🧄
2-4 tablespoons of butter 🧈 (or margarine)
KEEP IN MIND TURKEY IS A DRY MEAT) 1 cup of white wine (OPTIONAL)
1/3 cup of neutral oil Salt 🧂 and pepper to taste
POTATOES 🥔 🍠: 4 cups of cubed white potatoes 🥔
5 cups of cubed sweet potatoes 🍠
1/2 cup of milk
2-3 tablespoons of butter 🧈 (or margarine)
1 tablespoon of salt
TIP # 1) Finely chop your carrots, celery and onion 🧅 in a food processor


TIP # 2) TO SAVE TIME: Start by boiling the potatoes and in the meantime, you begin sautéing your mirepoix (soffritto) and cooking the minced turkey meat.
PREPARATION FOR THE POTATOES:
1) Peel and rinse both types of the potatoes and cut them into cubes. Place them in a a large sauce pan, fill with cold water (make sure all the potatoes are covered with water) add one tablespoon of salt. Bring them to boil and cook till the potatoes are soft and tender, by inserting a fork into a few pieces of potatoes.





**** PREPARATION FOR THE MINCED TURKEY MEAT:
1) In a large deep skillet, over a medium to high heat burner, pour your oil and sauté your carrots, celery and onion mixture (mirepoix). In Italian this mixture is called “soffritto”.

2) Once the mirepoix has sweated down a bit, add your minced turkey meat & break it down with a spatula (or wooden spoon). Sprinkle your seasonings and give it a good mix. Periodically stir your meat, (at this point you can add the white wine OPTIONAL). Stir till meat is completely cooked, by giving it a taste test. The minced turkey meat should have some caramelization to it. Now it’s time to add your corn 🌽 or frozen peas 🫛 and mix well into the meat.




3) Scoop the meat mixture in a deep baking dish, by covering the entire bottom of the dish and top it with the mashed potatoes. With a spatula, spread the mashed potatoes over the entire dish. Make sure you cover all the meat. *** If you want your dish looking more attractive and appealing for the Holidays, may we suggest that you pipe the mashed potatoes over the meat *** OR YOU CAN PREPARE INDIVIDUAL SERVING DISHES





4) Spray your cookie sheet with a bit of vegetable spray (or spread a bit of shortening) before placing the parchment paper. This will insure the parchment paper from sliding.
Place your baking dish on the cookie sheet and into a preheated 400 F - 425 F (all depending on your oven) for 20-30 minutes. NOTE: YOU CAN PREPARE THIS DISH IN ADVANCE AND CAN BE KEPT IN THE FREEZER FOR UP TO THREE (3) MONTHS.

Thaw in the refrigerator 24-48 hours before placing into a preheated 400F - 425F oven for 35-45 minutes, or until the edges of the dish starts bubbling.
