Pasta Al Limone

Lemon linguini (linguini al limone), a first course with a delicate and citrusy flavour, super easy to prepare and perfect for both everyday cooking or a social meal.


This dish can be prepared in less than half an hour, ideal if you are looking for a tasty, budget friendly dish, but have little time.


It is an Italian classic, especially in Naples, where they grow an abundance of beautiful lemon trees filled with big juicy lemons 🍋!


INGREDIENTS: Serves 4

One 16 oz. (500g) of linguine (or spaghetti )

1/2 stick (115 g) unsalted butter

1/4 cup (60 g) olive oil

2 garlic cloves

1 large lemon (or 2 small)

Salt & pepper to taste


Our choice of garnishes:

Drizzle of hot olive oil

Fresh grated lemon zest

Sprinkle of Parmigiano Reggiano


DIRECTIONS:

1) Bring to boil a big pot of water. Once it comes to boil, add the salt, 2-3 lemon strips,and the linguine. Cook two minutes less than the package instructions.



NOTE: While the linguine are cooking, let’s prepare the lemon sauce.


2) In a deep large skillet, over low/medium heat, add the butter, olive oil, garlic cloves, 3-4 lemon strips . Stir till the butter has melted.


3) once you are two mins from adding the pasta to your pan, you then add the juice of one lemon so as. Or to loose the flavour, also add one ladle of the pasta water. Now remove the lemon strips & the garlic cloves. Sprinkle some black pepper. Reserve 2 cups (500 ml) pasta water, if needed later.

4) Scoop the linguine into the lemon sauce. Mix well. Add more pasta water, if needed.


5) Let the linguine cook over low heat, stirring occasionally. In a few minutes, you will have achieved a light creamy lemon sauce full of flavour. Add a dash of black pepper if desired.


6) Plate and serve straight away. Best served hot.

7) Our choice of toppings are, a drizzle of hot olive oil, some freshly grated lemon zest & a sprinkle of grated Parmigiano Reggiano. Obviously, you add the toppings that you and your family like.
