Boursin Cheese Flavoured Creamy Polenta & Sautéed Mushrooms

Let’s whip up this creamy delicious dish!


INGREDIENTS POLENTA (serving for 6-8 ppl)

2 cups (312 grams) of yellow corn meal cornmeal

4 cups (945 ml) of water

2 cups ( 473 ml) of milk

150 grams (2/3 cup) of Boursin cheese (1 block)

parsley as garnish


INGREDIENTS SAUTEED MUSHROOMS

227 grams of white mushrooms

2 tbsp of butter butter



DIRECTIONS SAUTEED MUSHROOMS

1) add 1 tbsp of butter to a pan over medium low hear and add the mushrooms to sauté low and slow until fully cooked to your liking. you will do this at the same time you are cooking your polenta.

2) once they are fully cooked, remove from heat and add to the dish as a topping once the polenta is done cooking.

DIRECTIONS POLENTA

1) Add the water and milk to a deep pan over low medium heat and add your polenta and stir. You will continuously stir as you would a risotto.


2) You will see it begin to absorb the liquid and thicken up, you want to cook it low and slow so the grain softens into a creamy texture. Note to keep adding liquid if you see all is absorbed but the polenta isn't fully cooked yet.

3) Once the polenta is more than halfway done absorbing the liquid, it's time to add the Boursin cheese. We started with half the quantity first and then tasted to see if we add more. which we did, we added the full block of Boursin herbs and chive flavoured cheese. You will also add your salt & pepper at this time as well and give it a taste to adjust flavours.

Note: we are looking for a looser polenta similar to a courage or oatmeal (looser in texture)


4) Once it is cooked, add your sautéed mushrooms overtop and enjoy straight away! you will see it is a rich and creamy texture, so delicious. Note once some time has passed, let's say about 15 mins or so, it will begin to form a skin overtop but remaining creamy underneath as seen in the video.


This is a very simple, flavourful and filling easy meal to make anytime of the week!
