Swiss Chard and Beans, A Warm and Delicious Fall/Winter Meal.

Ingredients 1 medium onion

2 bunches of swiss chard

2 thin skinned medium potatos

1 can of cannelinni /white kidney beans 19 oz (540 ml)

1/2 a chicken cube (bouillon cube)

Optional a dash of turmeric

1) Rough chop your onion

2) Wash the leafy greens of swiss chard and remove from the stalk by using a sharp knife and run it along the edge.

3) In a deep frying pan, add about 1 tbsp of neutral oil over medium heat and add your onions to sauté them for a few mins.

4) While the onions cook off, rough chop your swiss chard and add to the frying pan.

5) Add the cannelini beans & half a chicken cube.

6) Fill the pan halfway up with water.

7) Grate your 2 whole potatoes that were previously washed and dried. Then add to your pan to cook along with the beans , onions and greens. This adds a wonderful thickness once they break down, making the dish creamy in texture.

8) You will cook this off for about 45 mins to 1 hr, occasionally stirring, you will see the greens brighten up as they cook and the rest of the ingredients soften into a creamy goodness of texture.

9) Once you are close to the end of your cooking, add a good drizzle of a good quality olive oil. We add this the last few mins of cooking so as not to loose the flavour of your good olive oil during the cooking process.

10). The dish is now ready to plate, you can leave it as is or you can add a nice dash of turmeric, which not only adds a lovely yellow tone to the dish, but it adds beautiful warm flavours which is absolutely delicious! not overpowering at all nor spicy, just the right amount of warmth in this comfort style dish.
