Spaghetti with walnuts / Spaghetti con le noce

A recipe coming to you from the countryside of Naples !
This Neapolitan dish is typically served on Good Friday or Christmas Eve. The two Holy Holidays when Catholics are not allowed to eat meat.
However, it’s ideal as a quick meatless meal any day of the week during the year. And it wouldn’t surprise me if this simple, easy and quick pasta recipe becomes one of your family’s favourite !
INGREDIENTS: (serves 4-6)
2 cloves of garlic crushed
1/3 cup (45 ml) olive oil
1 1/2 cups (150 g) finely ground walnuts
16 ozs. (450 g) spaghetti (or any type of long noodles)
Salt and black pepper to taste
1/2 cup (65 g) raisins ( OPTIONAL)
GARNISH:
a couple of handfuls of whole walnuts, grated cheese and chopped parsley 🌿
DIRECTIONS:
1) Start by putting a big pot of salted water to boil. Add spaghetti, cook by following package directions, or to your taste … IN THE MEANTIME

2) In a large deep skillet, over medium heat, pour the olive oil. Once it starts to glisten, add the 2 cloves of crushed garlic. Brown the garlic 1-2 mins and remove from oil, this part is just to add flavour to the dish with the aromatics of the garlic left in the oil, then add the ground walnuts, salt and pepper. Cook while stirring (4-5 minutes), or until toasted.







3) With a pair of tongs, collect the spaghetti. Add directly into the skillet. Mix well.If needed, add a few ladles of the pasta water. Remove from heat, add a handful of grated cheese. Mix till well incorporated.






4) Plate and garnish with chopped parsley, a few whole walnuts and maybe another light dusting of grated cheese.


Serve immediately and enjoy this incredible light and delicious meal !
