Spaghetti with Tomato Sauce and Clams/Spaghetti alle Vongole in Rosso 🍝| Christmas Eve dish.



Franca: My husband was born and raised in Naples, Italy 🇮🇹 where this dish originates. His mother regularly served this dish on Christmas Eve, as one of the 7 fishes. This dish is prepared two ways: with tomatoes 🍅 (in rosso) and without (in bianco). Whenever I prepare my husband this dish, it brings him straight back to Naples. 🇮🇹


It’s a quick, simple and easy delicious dish to prepare, not only on Christmas Eve, but all year round. 🍝😋


INGREDIENTS: (4-6 servings)


2 bottles of tomato sauce (23 ozs. each) / (660 ml each)

2 crushed garlic cloves 🧄

1/4 cup of olive oil (60 ml)

1 teaspoon of ground black pepper (1.5 g)

1 pack of spaghetti (16 ozs.)/(500 g)

A few leaves of fresh basil 🌿

CLAMS:

2 cans of clams (10.5 ozs. each)/(142 g each)

32 ounces of cold water (1 litre)

1 tablespoon of salt (7 g)


DIRECTIONS:


1) Rinse the canned clams under cold water. Fill a large bowl with the cold water, add the salt, give it a couple to stirs and add the clams in the salted water. Let soak for 2 1/2-3 hours. This process will help to release any sand from the clams (should there be any) and set aside.



2) In the meantime, heat the olive oil over in a large pot over medium/low heat. When the oil starts to simmer add the garlic cloves, cook until they start to take colour. Add your tomato sauce, rinse the bottles to collect the rest of the tomato sauce and pour into the pot. Add your black pepper and basil. Cook over a medium/low heat for approximately 2 hours, periodically stirring.

NOTE: OUR TOMATO SAUCE IS ALREADY SEASONED WITH SALT.

If needed, add your salt to taste








3) After the 2 hour mark that the sauce has been cooking, time to put a pot of water for the spaghetti. Bring the water to a boil, add salt to taste and cook the spaghetti, as per the directions on the package, periodically stirring.



4) At the same time that the spaghetti are cooking, drain the clams, give them another quick rinse under cold water and add them to the tomato sauce.




5) Drain the spaghetti well and dress with the clammed tomato sauce, plate and serve. Simply healthy and delicious ! 🍝😋
