Schiacciata Con L’Uva- Pizza with Red Grapes

La schiacciata con l’uva (with grapes), also known as “ciaccia con l’uva”, is a sweet pizza prepared during the grape harvest period (vendemmia in Italian), September and October.  A simple, easy and delicious snack.



Schiacciata is a pizza with a lovely sugary crust and lots of juicy crushed caramelized grapes that when baking, gives  off an intense wine aroma ! We make Schiacciata all year round, by using tables grapes as they are sold during the entire year.


Schiacciata means crushed in English.


We would like to mention that we made our Schiacciata with a thin crust pizza, however; it can also be made with thicker crust pizza. Your choice of crust.



INGREDIENTS: DOUGH


TIP: always best to prepare and measure all your ingredients first

2 1/2 cups (300 g) all purpose flour

2 tsp. (10 g) active yeast

7 1/2 ozs. (215 ml) warm water

1 tsp. (5 ml) salt

3 tbsps. (45 ml) olive oil


Shortening to generously grease your baking sheet



TOPPING:


About 2 grapples of red wine grapes (when not in season, use table grapes)

Sprinkle: sugar and cinnamon mixture

Drizzle of olive oil



DIRECTIONS: Oven temp: 450F (235 C)


                        Baking Time: 18-22 minutes



1) In a small bowl, add yeast with the warm water. Give it a good whisk.


   Cover  with a plate to keep the temperature of the water warm. Set aside for 5 minutes.


2) In a stand mixer, with a hook attachment, mix together the flour & salt.


3) Give the yeast another good whisking. Add the yeast & olive oil into the flour. Mix on low speed (#2) till well combined. Scrape down the sides if needed.

4) Increase speed to number 6 and mix for an additional 3 minutes.

5) Scrape sides to gather the dough into a ball. Add a drizzle of olive oil to coat the sides of the bowl & on top of the dough.  Coating the sides of the bowl will allow the dough to easily rise.

6) Cover with plastic wrap (or a lid). Wrap the bowl in a tablecloth. Place in a warm draft free spot in your house for one hour or until double in size.

7) IN THE MEANTIME: remove the grapes from the vines.  Rinse and pat dry. Prepare your sugar & cinnamon mixture. Generously grease your baking sheet with shortening. Using shortening keeps the dough in place while extending it on the baking sheet.

8) Dough has doubled in size. Evenly extend the dough onto the baking sheet.

9) If you are using wine grapes, simply top them over the pizza dough, press them inside the dough with your hands.  The wine grapes crush easily.

However; if your are using table grapes, you will need to crusH them with your hands before placing & pressing them into the pizza dough.

10) Sprinkle the sugar & cinnamon mixture.  Drizzle of olive oil, including the outer part of the dough.

11) Place in a preheated 450F (235 C) oven for 18-22 minutes.  Make sure the bottom of the pizza is cooked.  


12) Transfer onto a wire rack.
