Savoiardi

Savoiardi are classic Italian biscotti, known famously as ladyfingers biscuits, due to their elongated shape, which resemble lady’s fingers.


These biscuits are delicious on their own and perfect for dunking in a good cup of coffee, tea or a glass of milk. They are often used to make various spoon desserts, such as; tiramisu, zuppa inglese, charlotte or alongside zabaglione and semi-freddo to name a few desserts.

The biscuits are golden in colour with a spongy soft texture and a tasty light crust.


Follow this quick easy recipe, made with simple pantry ingredients, step-by-step, and you’ll achieve yummy homemade savoiardi biscotti. They are tastier and more wholesome than the store-bought ones!


INGREDIENTS:

Prep time: 15 minutes

Baking time: 20 minutes

Servings: approx 12 biscuits


4 cups (500 g) all purpose flour

2 eggs (room temp)

1/2 cup (125 ml) milk (room temp)

1/4 cup (62 ml) olive oil

1/4 cup (62 ml) sunflower oil (or any neutral oil)

3/4 cup (150 g) sugar

2 tsp baking powder

zest of one lemon

superfine sugar (for coating the biscuits)


DIRECTIONS: Oven temp: 350F (175 C)

1. In a mixing bowl, whisk together the eggs, sugar and lemon zest, till well blended (about 1-2 minutes).

2. Pour in the milk, olive oil and sunflower oil. Whisk for another couple of minutes.

3. Sift together the flour and baking powder.

4. Add the flour mixture into the wet mixture and little at a time (3-4 increments), mixing with a spatula or wooden spoon.

5. Turn the dough onto a lightly dusted work surface. Knead dough (about 1-2 minutes). Dough should feel soft and a bit sticky. Form a ball.

6. Trim of pieces of dough with your hands. Roll out into ropes about 1/2”(approx 1.25 cm) thick and 4-5” (approx 10-13 cm) in length.

7. Roll each rolled out piece of dough into superfine sugar. The superfine sugar will give the biscuits that signature sweet light crust. Place on a baking sheet, greased and lined with parchment paper.

8. Lightly flatten the top of the biscuits. Leave space between each biscuit as they will grow during the bake.

9. Bake in a preheated 350F (175 C) oven for 18-20 minutes or until they turn into a light golden bottom while the top of the biscuits remain a lighter shade.

10. Transfer onto a wire rack. Let cool completely. Biscuits will slightly crisp as they cool.
