Peach Cobbler

Peach cobbler is a classic comfort summer dessert made with sliced peaches and a cake like batter. Unlike a pie, a cobbler does not have a bottom crust. A simple, quick and easy make at home recipe, yet so delicious!
If you are wondering what the difference is between a cobbler and a crumble: the main difference is that a cobbler uses a batter or dropped biscuit dough, while a crumble uses a sandy like flour, butter and sugar mixture. However; what they do have in common is that they both feature a bubbling fruit base.
A summer cobbler can be made with almost any juicy fresh fruits. The most popular choices are peaches, berries, apricots, nectarines, plums and cherries.
Apples and pears are popular during the fall/winter months. Bottom line is that this old fashioned recipe is made and enjoyed all year round with its seasonal fruits.
Best served warm, topped with a scoop of ice cream (usually vanilla flavoured) or whipped cream.
Prep time: 15 minutes
Size baking dish: 9” x 13” (approx. 23cm x 33cm)
Oven temp: 350F (175 C)
Baking time: 35-40 minutes
INGREDIENTS:
5-6 firm peaches
3/4 cup (150 g) sugar
1/4 tsp. salt
BATTER:
3/4 stick (85 g) unsalted butter
1 cup (120 g) all purpose flour
1 cup (200 g) sugar
3/4 cup (180 ml) milk (whole milk best)
2 tsps. baking powder
1/2 tsp. ground cinnamon
1/4 tsp. salt
DIRECTIONS:
1. Gather all your ingredients with their measurements.
2. Preheat oven at 350F (175 C).
3. Wash and pat dry your peaches. Cut into wedges.
4. In a large skillet, over stovetop, medium heat, add your peaches, sugar and salt.Stir till all the sugar is melted and the peaches have released some of their juices.Remove from heat. Set aside while we prepare the batter.


5. Add your stick of butter into your baking dish. Place dish into your preheated over till butter has completely melted. Remove from oven. Set aside.
6. In a large mixing bowl, sift together the flour, backing powder, cinnamon and salt.Add the sugar. Give it a stir.

7. Pour in the milk and lightly mix till combined. Not to worry if there are some lumps in the batter.


8. Pour batter evenly over the melted butter. DO NOT STIR

9. Spoon the peaches and their juices over the batter. DO NOT STIR.

10. Place into a preheated 350F (175 C) oven for 35-40 minutes or until golden.During the baking process, the peaches will sink while the batter magically rises over the peaches to form a golden buttery crust on top.

Best to serve this delicious ooey gooey dessert warm, topped with a scoop of vanilla ice cream or a dollop of whipped cream!
