Sausage & Rapini: an Italian Pasta dish that is classic & sensational.

This is a simple yet delicious staple dish that you will absolutely love!
Ingredients
A bunch of rapini
4 sausages (mild or hot as you wish)
1 box of pasta 500 grams (we usually use orecchiette but substituted for what we had on hand)
Olive oil
Parmigiano cheese
Anti pasto
Directions
Start by chopping of the stems of the rapini and rinsing them before adding to a pot of boiling and salted water where they will cook for no more than 3 mins to release some of the bitterness found in these greens!

You will see the liquid will become green however the salt helps retain the bright vibrant colour!

Once done, strain and pour cold water over them to stop the cooking process and set aside until it’s time to add to the dish.

Next is removing the casing of the sausages and adding to an oiled pan over medium heat and cooking them well in bite sizes (you can use your hands, a meat separator, cooking shears or a masher at any point in the cooking to get the desired size you want.
While you cook the sausages be sure to start boiling the water for the pasta and salt it generously!


Once sausages are halfway cooked-add pasta to cook.
When the pasta is almost done and sausages are browned, add the rapini in with the sausages and using cooking scissors, snip them to bite size!

Once pasta is done cooking, scoop it out and into the pan with rapini/ sausages and begin to toss around!

Add a few handfuls of parmigiano cheese
Add a few spoonfuls of antipasto marinades veggies as well as a few spoon fulls of the hot oil from the antipasto!
Then generously add some good olive oil and a few ladles of pasta water to marry all the flavours together and create a loose yet creamy sauce!


After you have tossed it all together you are ready to serve!
