Slow Cooked BBQ Spare Ribs (side dish of Mashed Potatoes & Sautéed Peas)

Are you in the mood to eat some delicious, smokey, sticky barbecue baby back ribs?
There is no need to go to the restaurant!
Tune in and we will show you how simple and easy they are to make at home, without busting your budget, by cooking them in a slow cooker (or a crockpot) & let it do all the work. No babysitting is required!
We will be cooking our baby back ribs low & slow, in the slow cooker, until they are perfectly tender, but not falling off the bones. The slow cooker will cook the ribs gently and evenly.
Adding a bit of water provides steam so the ribs don’t dry out. Finishing them off with an extra brushing of barbecue sauce & placing them under the broiler. The end result is juicy, tender, mouthwatering delicious ribs every single time.
A special thank you to Nadia, for sharing with us her recipe!
We will be accompanying the BBQ baby back ribs with a side of mashed potatoes, sautéed peas & coleslaw.
INGREDIENTS: Serves 6-8
2 racks baby back pork ribs (5-5 1/2 lbs) (approx 2K)
1 tbsp. packed dark or light brown sugar
1 tbsp. molasses
1 tbsp. smoked or regular paprika (or a combination of both)
1 tbsp. salt
1 tsp. black pepper
1 1/2 tsp. garlic powder
1/2 cup tomato based BBQ sauce + extra for basting & serving
1/2 cup (62 ml) water
1 tsp. liquid smoke (OPTIONAL: for those who like an extra smokey flavour)
DIRECTIONS: Baby Back Pork Ribs
Cooking Time: On High (3-5 hours)
On Low (6-8 hours)
Depending on how much meat is on the ribs
1) Preparing the ribs: remove the silver skin that lines the bone side of the ribs, by carefully sliding your knife in between the bones & the skin on the thinner side of the slab. Then with your hands, lift the beginning piece of loose skin & pull it away from the bone.

2) Pat dry the ribs with paper towels. Cut into sections that will fit into your slow cooker.

3) In a medium size mixing bowl, and all your ingredients, MINUS the water. Mix well.

4) Coat the ribs with the mixture. Lay them in the slow cooker. Add the water.Cover with lid. Let cook on the setting of your choice: (high 3-5 hours) (low 6-8 hours).

NOTE: We do an extra step: at the halfway mark, we switch the top slabs of ribs and place them at the bottom of the slow cooker & vice versa.

5) Once fully cooked, put the ribs on a baking sheet lined with aluminum foil. Brush generously with extra BBQ sauce. Place them in the oven, on broil, until the sauce gets sticky & charred in some spots.

6) Sieve the juices from the bottom of the slow cooker. Pour into a gravy boat.

7) Cut into serving pieces. If desired, serve with more BBQ sauce.

DIRECTIONS: Mashed Potatoes
NOTE: When seasoning with salt, keep in mind if you are using salted or unsalted butter (or margarine).
1) Peel, rinse & quarter the potatoes.
2) Place them in a large cooking pot. Cover with cold water, by 2-3” (approx. 5cm-8cm). Bring to a boil. Cook till fork tender.

3) Drain the potatoes. Add them back into the pot. Add some of the butter & milk.

4) Using a potato masher, partially mash the potatoes. Add the remaining of the butter & milk, until you achieve a creamy, smooth texture.

5) Give it a taste. Add salt if needed.
6) Pour into a glass serving bowl (or stainless steel bowl).
DIRECTIONS: Sautéed Frozen Peas
1) In a large deep frying pan, over medium heat, generously drizzle some vegetable oil & one stick of butter. Melt the butter.

2) Add your peas. Stir & mix till all the peas are well coated.

3) Add salt & pepper. Mix well. Cover with lid for 1 minute.

4) Remove the cover. Squeeze in the juice of one lemon, over a little strainer to catch the seeds. Stir well.

5) Cover with lid for about 1 minute. This will allow the peas to soak in some of lemon juice.
6) Uncover, and finish sautéing till fork tender. Place into a serving bowl.
There you have it ! The meal is ready to be plated, served and enjoyed ! 😋
