Pudding - Budino di Riso

Rice pudding is a type of dessert that one might crave on a wintery day ! One of the most satisfying budget friendly delicious dessert you can make straight from pantry staples in 30 minutes!


It’s a light sweet mixture of rice that is cooked in milk until the rice is tender soft and creamy, and by adding a bit of cinnamon, makes it a warm comforting dessert.


Amazingly super simple, quick and easy to make without having to open the oven.

Oh, did we mention this is also a gluten free dessert!


INGREDIENTS: Prep time: 5 minutes

Cooking time: 30 minutes

Makes 2 dessert cups (7 oz - 200 g) each


1 cup (approx 200 g) Arborio or canaroli rice

2 cups (500 ml) milk

1/4 cup (50 g) sugar

1 tsp (5 ml) clear or regular vanilla extract

1/2 tsp (2g) ground cinnamon (plus a very light dusting)

Pinch of salt

1/4 cup (60 g) raisins or dried cranberries (OPTIONAL)


GARNISH: OPTIONAL

A few raisins or cranberries

Drizzle of honey


DIRECTIONS: Stovetop


1. In a medium size saucepan, over medium-high heat, add in all your ingredients, (no particular order). Stir periodically. Bring to a light boil.



2. Reduce heat to a simmer, continuously stirring for about 30 minutes, or until the rice is very tender (or cook to your taste).

3. Scoop into your dessert cups (or bowls). Best served warm OR room temperature or even cold.



TIP: The pudding thickens as it cools, add a touch more of milk, give it a stir to thin it out if desired before serving.
