Penne Alla Vodka (a meal in under 15 mins)

Penne Alla Vodka (a meal in under 15 mins)


Ingredients

3-4 cloves of garlic

2 tsp chopped parsley (a handful)

1 1/2 cups of 15% cooking cream

2 tbsp unsalted butter

3-4 tbsp of tomato paste

1/3 cup of vodka

2 tbsp olive oil

1 tsp chili flakes

salt and pepper to season

1 package of your choice of penne (around 500 grams)


directions

prep the garlic (diced and chopped fine, and flattened with the knife to make a paste)

prep (wash, rinse, pat dry the parsley) remove leaves from stem, and bunch up to finely chop.

bring water to a boil and generously add salt

once water is boiling add pasta to cook to al dente and during the cook time of pasta- you will prepare your sauce !

Over medium heat, add the olive oil and butter and let melt and then add the garlic and let cook for 1 min or so until the aroma bursts through and garlic turns light golden-

then add the tomato paste and stir

then add the cream and stir

reduce heat and continue to stir

add vodka and stir to combine (this needs 2-3 mins to cook off the alcohol)

add some salt/pepper to taste and the chili flakes to develope more flavour

you can add a bit more cream if you desire- develope it to your taste buds.

add some pasta water to loosen the sauce.

once pasta is almost al dente- add your parsley (half of it) and stir

then strain and add pasta to sauce and mix to combine and plate right away

garnish as you wish- i garnished with extra chili flakes and more parsley.

add as much or as little sauce as you wish as well!

this is so rich, creamy and full of flavour! a dish the whole family will enjoy and all under 15 mins from prep to plating!
