Lasagna Recipe - smashed meatballs-Classic - Quick & Easy

SAUCE INGREDIENTS

2 cans of San Marzano tomatos

2 cloves of crushed garlic

2 sprigs of fresh washed basil

1/2 diced white onion

olive oil to coat bottom of pan

salt

pepper


DIRECTIONS

pass tomatos through a food mill

rinse the cans with water to get all last bits of sauce

add to a sauce pan

add olive oil to coat bottom of pan

add half a diced onion

add 2 crushed garlic cloves

toss all in olive oil until translucent

then add your sauce

salt and pepper

fresh basil


Simmer for 30 mins (small bubbles- before adding your meatballs)

MEATBALL INGREDIENTS

while sauce is simmering- make the meatballs

we used about 780 grams of minced veal (you can use whatever meat you wish)

2 large eggs

italian breadcrums (add as you go along)

1 cup of whole milk


MEATBALL DIRECTIONS

add minced meat to a bowl

beat two eggs and pour over meat

add a handful of breadcrumbs

add the full cup of milk

and begin to mash with your hands (please wash hands prior) you want them not too wet and not too dry- they should be able to hold together and bind, so you may have to add a bit more breadcrumbs or milk to reach perfect consistency.

once done place them in your simmering sauce by slowly lowering them down with a wooden spoon into the sauce and be sure to fill the bottom of the saucepan with all meatballs and that they are all submerged in the sauce-

place lid over leaving a mini gap for air to escape-cook for 2 hrs (stirring periodically)

after 1hr of cooking, the meatballs should be done! remove a meatball to check -

if it is cooked through, then remove all meatballs from sauce using a slotted spoon-

them take a potato masher and mash all meatballs up and let cool for lasagna assembly.

once meatballs are cooling, boil your lasagna sheets add to a pot of salted boiling water 1 full pack of lasagna sheets and cook right before aldente you want them to be malleable but too soft as they finish cooking in the oven.

once cooking is done, strain them and rinse with cold water to stop cooking process.

lay on clean dish towels on sheet pans-

LASAGNA INGREDIENTS

grate one large brick of mozzarella and add a good sprinkling of parmigiano


wash and clean a good amount of spinach and lay to dry in between clean dish towels


have your sauce ready


have your meatballs at room temperature


have 1 cup of ricotta



ASSEMBLY OF LASAGNA

in a baking dish begin

ladle in a good amount of sauce to cover the bottom(this prevents the pasta from sticking)

then layer in your pasta sheets slightly overlapping (you may need to cut the noodles to fit your pan)

next, spoon some ricotta and with a spoon spread it out

next add some spinach

next sprinkle some meatballs overtop

next sprinkle your mozzarella with parmigiano

next add some sauce

(repeat until your noodles are all used or until your dish is full)


oil a piece of aluminum foil and place overtop lasagna (this prevents the cheese from sticking to it) bake at 400 degrees for about 45 mins... (once bubbling and lasagna is fork tender

remove foil and finish baking another 10-15 mins for a crunchy topping.

serve with another ladle of delicious marinara sauce and enjoy !
