How to make Polenta with sausages and sautéed Kale.

Preparation time for this meal: 40 minutes

POLENTA:

Ingredients:

4 cups of cold water

1 cup of polenta

1/4 teaspoon of salt

2 tablespoons of unsalted butter

Drizzle of olive oil


Preparation: Cooking Time approx. 30 minutes


1) Preheat your burner on medium heat.


2) Place your sauce pan on the preheated burner and add your cold water and salt.

3) Slowly add your polenta into the water while constantly whisking. By slowly adding the polenta into the cold water, it prevents the polenta from forming lumps.

4) You need to continuously stir the polenta to prevent it from sticking to the bottom of the pan.

5) Once the polenta starts to thicken and comes to a boil, lower the heat and continue to cook the polenta, while always stirring.

6) When you see that the polenta starts to pull away from the sides of your sauce pan, this means that your polenta is ready and needs to be removed off of the burner, and immediately stir in your 2 tablespoons of butter 🧈

7) With a spatula or large serving spoon, pour the polenta into your serving dish.*** NOTE *** Polenta solidifies as it cools

8) Top the polenta with a little drizzle of olive oil, (or the oil of your choice) to give it a nice appealing shine.


OVEN BAKED SAUSAGES:

Baking time: Approx. 35 minutes


Ingredients: 6 sausages of your choice

Preparation:


1) Preheat oven at 400 degrees Fahrenheit


2) Remove the casing from the sausages.

3) Place the sausages in a baking dish that has been lightly drizzled with olive oil(or neutral oil) and coat the sausages.

4) Cover your baking dish with aluminum foil and place in the oven.

5) At the midway mark, remove from oven and turn over the sausages and back into the oven UNCOVERED for the remaining of the baking/cooking.

*** NOTE *** By removing the foil at the midway mark, this will give the sausages a nice crispy exterior texture.

STEAMED KALE 🥬

Cooking time: Approx. 15-20 minutes

Ingredients:

2 bunches of kale 🥬

2 chopped garlic cloves

1/2 teaspoon of salt

1/2 teaspoon of peperoncino (chili flakes)

1/2 cup of water

2 lemons 🍋

Drizzle of olive oil


1) remove kale from stems and rip into small pieces and wash in cold water.

2) Over a burner at medium heat, place a large deep frying pan or sauce pan, and drizzle the bottom on the pan with the oil of your choice and 2 cloves of sliced garlic.

3) When the garlic starts to sizzle, add half of the kale and light sprinkle a bit of salt and peperoncino (chilli flakes), then add the remaining of the kale 🥬 and top it off with another light sprinkle of salt & peperoncino and 1/2 cup of water.

4) Cover your pan with a lid and let it steam/cook for 15-20 minutes (or until you reach the texture of your choice). At the halfway mark, turn over your kale 🥬 with tongs, to get an even texture.


5) Remove the pan off of the burner and with your tongs, take your kale and place on a serving dish.

6) Slice 2 lemons 🍋 in quarters and place them around your serving dish.
