Ditali e Piselli- Cacio e Pepe con Uova 🥚

It’s one of the simplest pasta dishes to prepare, originating from the Campagnia region.
In under 20 minutes, you have a healthy, economical main dish to feed your family. Made with only a handful of ingredients which we are sure you have in your kitchen. This dish is traditionally made with any long type of noodles 🍜, such as spaghetti, linguini, bucatini or fettuccini.
We chose to prepare this dish by using Ditali (a short cut pasta) and frozen peas 🫛.
This recipe makes 4-6 servings.
INGREDIENTS:
1 package (18 oz) Ditali - (500 g)
2 cups (230 g) frozen peas 🫛
Salted water
EGG MIXTURE:
6 eggs 🥚
1 tablespoon (3 g) black pepper
1 cup (30 g) finely chopped parsley
1 cup (80 g) grated cheese (pecorino or parmigiano reggiano)
DIRECTIONS:
1) Start by cooking the pasta in salted water, after 3-4 minutes, add the frozen peas to cook together with the pasta.
NOTE: When ready to drain the pasta, reserve 2 cups of pasta water.



2) While the pasta and peas are cooking, prepare your egg mixture in a large glass bowl. Crack your eggs, add the grated cheese, black pepper and chopped parsley. Mix well till all is smooth and well combined.



Before draining the pasta- reserve 2 cups of the pasta water for later-
TIP: As a reminder to reserve the pasta water, place a glass heat proof measuring cup in the calendar.

3) Loosely drain your pasta and peas and pour them back in your cooking pot. The heat from the pot acts like a type of “double broiler” and will gently help to cook the egg mixture without scrambling them.

4) Gently add the egg mixture into the pasta and peas while constantly stirring, adjusting the consistency with the reserved water until you achieve a creamy like texture silky sauce.


5) Plate, serve and eat immediately! A simple, healthy and flavourful dish ! Yum 😋




Should you have any leftover, warm in a skillet and add a couple of splashes of water.
