Crispy and Tender Chicken Cutlets/Cotolette di Pollo/Panini

Simple, quick and easy to prepare !

Are you searching for a dinner that will please the entire family? Well look no further. This is a meal that hands down the entire family is sure to love !


I am sure that there are times when we prepare a meal and end up with a couple of family members that end up frowning when they are seated at the dinner table.

Let’s be honest … we’ve all been there. However, NOT with this meal ! You’ll have everyone seated with smiles on their faces.


These light, crispy and tender chicken cutlets are definitely a crowd pleaser. They can be ready in about 30 minutes and are perfect for any busy week day family meal.

There are countless variations of side dishes to accompany the chicken cutlets and don’t forget to get to make extra for those lunch boxes !


INGREDIENTS:

14 chicken cutlets

3 eggs

3 cups (270 g) plain or Italian seasoned breadcrumbs

2 cups (240 g) flour

1 teaspoon (3 g) black pepper

1 teaspoon (3 g) regular or smoked paprika

1 teaspoon (6 g) salt

1/2 teaspoon (1.5 g) garlic powder

FOR FRYING: any neutral oil, plus one tablespoon (14g) of butter or margarine


DRESSING: Our choice for some ideas, or your choices

Note: we used ciabatta style paninis


1) Mayonnaise, lettuce 🥬 and tomato 🍅 with a light sprinkle of salt and black pepper


2) Thinly sliced store bought eggplants 🍆 with a drizzle of the oil on both sides of the panino


3) Our homemade pesto, spread on both sides of the panino and roasted peppers (which we grilled with my homemade invention of a panini press) hahaha … We make do with what we have 😂


DIRECTIONS:

1) Prepare your stations in the order of dipping: flour, eggs and breadcrumbs. In the flour add all the dry ingredients and give it a good mix. Beat the eggs.

2) Lightly coat both sides of the chicken cutlets in the flour, then dip both sides in the eggs and lastly coat both sides in the breadcrumbs. Continue this process till all the cutlets are breaded.

3) In a large frying pan, heat any neutral oil (vegetable, canola, corn …) add the butter or margarine. Fry the cutlets till they reach a golden colour (about 2 minutes on each side).

Enjoy this healthy, delicious, simple, and easy great meal any day of the week ! You can even grill them for a pressed panino sandwich!
