Zabaglione - A sweet boozy Italian incredibly delicious custard dessert

Zabaglione is a classic Italian dessert that is simply made with 3 ingredients, egg yolks, sugar and Marsala, which is a fine and delicate sweet wine from Sicily.

This timeless dessert is very simple and ridiculously easy to make.


Our mothers and grandmothers would make this for us if we weren’t feeling well because the egg yolks were enriched with iron, which gave our body energy to heal. Imagine that !!!! BEST MEDICINE EVER !!!!


INGREDIENTS:

6 extra large egg yolks (or 8 large egg yolks) at room temperature

1/2 cup (100 g) of regular sugar

1/2 cup (125 ml) of Marsala (sweet dessert wine)


DIRECTIONS:

1) In a glass proof bowl (or stainless steel bowl) with a whisk, beat the egg yolks and sugar until thick (paste form). This will take 5-7 minutes.

2) Place the bowl over a double boiler, making sure that the bottom of the bowl does not touch the water). Continue to whisk, either by hand or with an electric hand mixer, and slowly add the Marsala a bit at a time (DO NOT ADD THE MARSALA ALL AT ONCE). Beat for another 10-15 minutes. The idea is to warm the mixture and thicken it with air. You might have to remove the bowl off of the heat now and then to avoid cooking it through.

3) The result should be an “eggy” cloud like silky cream; however, thick enough thata Savoiardi biscuit will stand upright once the zabaglione is poured into a serving glass.


This dessert is best served warm. We prefer it a bit chilled, so we placed it in the refrigerator for a couple of hours. It can also be kept in the refrigerator for a couple of days, but you will notice that the Marsala tends to separate and drops at the bottom of the bowl. All you have to do to “revive” it, is to give the mixture a few good whisks till all is well combined.
