Sweet Ricotta Fritters / Italian Castagnole

Castagnole Fritte, Italian Carnival Fritters are sweet, deep fried dough balls. These Italian-style fritters are infused with lemon and finished by being rolled in fine granulated sugar right after they are fried so it coats well! You may also dust with powdered sugar or drizzle them with chocolate or caramel sauce!


So simple to make, it’s as easy as 1,2,3!


INGREDIENTS

1 cup ( 240 grams) ricotta cheese

2 eggs, at room temperature

2 tablespoons ( 25 grams) sugar

1 teaspoon ( 5.70 grams) vanilla extract

3/4 cup (90 grams) all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

Neutral oil of choice for frying

confectioners sugar for dusting

Chocolate & caramel sauce for drizzle


1) add the eggs & Ricotta cheese to a bowl (be sure to use full fat ricotta cheese) mix well.



2) add the vanilla to the mixture and then add the sugar, salt, baking powder to the flour and add to wet mixture and blend well. You can also do it by hand with a whisk.




3) in a deep frying pan heat the neutral oil on medium. Be sure to have a basket lined with paper towels to absorb the excess oil.


4) with a scooper or simply using spoons, carefully scoop out a tablespoons worth of the mixture into the oil in small batches.

5) Fry for 2-3 minutes until they are golden brown, if the oil is heated up well you will see they will flip and turn over on their own!

6) Once golden brown scoop them out and add to the paper towel lined bowl to absorb any excess oil.

7) Finish off as desired, traditionally tossed in fine sugar , if not dust with powdered sugar or drizzle with a delicious sauce of choice!

These are the softest most delicious bite size treats that are so simply to make and the kids will absolutely love them!
