String Beans, Potatoes and Tomatoes - An Italian Summer Dish

String beans, potatoes and tomatoes is a classic Italian dish that can be served as a main meal or a side dish.


This dish doesn’t have an “actual name”.  In Italy it’s known as “fagiolini, patate al


pomodoro (or in umido)”.  It’s a popular summer dish that is braised/stewed in canned or fresh tomatoes until the vegetables are tender. You can also use strained tomatoes.


A one-pot flavourful delicious summer comfort food that is simple and easy to prepare.



String green beans are among the vegetables we appreciate most in the summer months. Picking them straight off the vines in our vegetable garden (orto in Italian), are some of our great memories.



Bread, either fresh or stale, is a must to dip and collect that tasty tomatoe sauce.


The Italians call it “fare la scarpetta”.



INGREDIENTS: Total time: 1 hour

Serves 4


One can (18 oz/500 g) whole San Marzano tomatoes

4 cups (approx 460 g) green string beans (rinsed, ends trimmed, cut in half)

5-6 medium size potatoes (peeled, rinsed, cut in chunks)

1 tsp oregano

1/2 tsp black pepper

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 cup (approx 125 ml) olive oil

Salt to taste

Few basil leaves



DIRECTIONS: Over stovetop



1. Thoroughly rinse your string beans in cold water. Make sure that all of the dirt is removed. Trim the ends. Cut in half. Set aside.


2. Peel and rinse your potatoes. Cut into chunks. Set aside.

TIP: to avoid browning, place potatoes in cold water till ready to use.


3. In a large bowl, crush the tomatoes with your hands.

4. Place a large deep skillet over stovetop, on medium heat, pour your olive oil.

   Add the crushed tomatoes. Slosh your tomato tin and bowl with water to collect the remaining tomato juices. Add to skillet. We don’t waste anything.

5. Add the spices, oregano, garlic and onion powder, salt, black pepper and basil leaves. Stir to mix. Cover with lid a jar. Cook for 10-15 minutes.

6. Add the potatoes. Cook for about 10 minutes.

7.  Time to add the string beans. Continue to cook for an additional 10-15minutes or until the potatoes and string beans are fork tender.

8. Plate and serve with bread.


To call everyone at the table in our household, in our dialect we say, “ e pronto a manga” !
