Satisfy Your Sweet Tooth With A Delectable Almond Pear Vanilla Loaf Cake

This delightful pear-vanilla combo is a must try. Fluffy, moist and fruity. 🍐
It’s one of the easiest and delicious loaf cakes I have ever made. You can also use any baking pan for this recipe.
Perfect for breakfast, as an afternoon tea 🫖 or coffee ☕️ cake, or dessert.
Further more, this fresh tasting pear cake goes really well when served with a drizzle of caramel, melted chocolate, whipped cream or a nice scoop of ice cream.
INGREDIENTS:
1 1/4 cup (165g) sifted all purpose flour
3/4 cup (145g) sugar
1/2 cup (125ml) milk at room temperature 🥛
1 stick (113g) softened unsalted butter 🧈
1 1/4 teaspoon (5g) baking powder
1 tablespoon (12ml) vanilla extract
1/2 teaspoon (3g) salt 🧂
2 large eggs 🥚 room temperature
4 firm Bosc pears 🍐
Handful of sliced almonds for topping
DIRECTIONS: Preheat oven 350 F (180 C) and prepare you loaf pan or baking pan of your choice.
1) Lightly grease the pan, line it with two large strips of parchment paper, (one piece placed vertically and the other piece horizontally). Grease and flour the parchment paper. This will help to easily remove and release the cake from the baking pan.Set aside.

2) In a medium size bowl, using an electric mixer on medium speed, cream the butter and sugar until light and fluffy (2-3 minutes).


3) Add eggs, one at a time, incorporating each one fully before adding the next one.
Then add the vanilla extract and the milk, mix well.




4) In a separate bowl, sift flour, baking powder and salt all together. On low speed, add to the batter in 3-4 increments. Incorporating flour mixture fully before added the next one. Scraping the bowl as needed with a spatula. Batter will be thick and looks a bit “gritty”. Not to worry.




5) Peel and grate one pear. Add to the batter. Mix well with a spatula.



6) Peel and core the 3 remaining pears 🍐 (keep the pears in one piece). Core the pears by using the melon baller or a small spoon.


7) Pour the batter into the loaf pan and spread it out evenly. Insert the pears in a row. Top the batter with sliced almonds.




8) Bake for 45-50 minutes. Every oven is different and might need extra baking time. Always insert a toothpick to make sure it’s completely clean before removing the cake from the oven.
9) Let cool in the baking pan (5-10minutes) before removing it out of the pan. Place cake on a wire rack, remove the parchment paper to finish cooling to your liking. May be served warm or room temperature.
