Pumpkins Apple Walnut Tube Cake

Fall has quickly arrived upon us and what’s the best way to welcome this cool, crisp and colourful season, than by baking a perfectly warm spiced cake. If you’re looking for a fall-flavoured cake, look no further. Our recipe for this tube cake is made with some of the popular autumn ingredients like pumpkin, apples and walnuts.

Another easy and simple recipe that comes together in almost no time at all and packed with other delicious flavours. However; there are so many other variations between

add-ins and toppings, resulting in different types of cakes every time.

We left our tube cake plain, but you can “juge it up” by topping it with different glazes, for example: maple glaze, chocolate glaze, caramel glaze, cream cheese glaze) to name a few. It’s a great cake to bake and serve for your Thanksgiving gathering !

Happy Fall, y’all !

INGREDIENTS:

Prep time: 20 minutes

Baking time: 55-60 minutes

Serves: 10-12

2 eggs (room temp)

3/4 cup (150 g) white sugar

1/2 cup (approx 100-110 g) brown or golden sugar (packed)

2/3 cup (approx 158 ml) vegetable oil (or any neutral oil)

1 tsp vanilla extract

1 cup (approx 200 g) pumpkin purée

2 cups (240 g) all purpose flour

1 tsp baking powder

1 tsp baking soda

1 tbsp ground cinnamon OR 1/2 tsp pumpkin spice

1/4 tsp salt

2 apples (peeled, cored and diced)

2 apples (peeled and grated)

* we used McIntosh apples but Granny Smith apples also work well in this recipe)

1 - 1 1/2 cup (approx 120-180 g) chopped walnuts

One tube pan or Bundt pan

DIRECTIONS: Oven temp: 350F (175 C)

1. Lightly butter your tube pan, including the inner tube. Set aside and start to preheat your oven.

2. In a mixing bowl, sift together your flour, baking soda, baking powder, cinnamon and salt. Set aside.

3. Peel and prepare your apples (2 diced - 2 grated). Set aside. Don’t worry if your apples start to turn brown (oxidase) as they will bake into the dark batter.

4. In another mixing bowl, using an electric hand mixer on medium speed, beat together the eggs, white and brown sugars. Beat till most of the sugars or all of the sugars have dissolved, about 1 1/2 - 2 minutes.

5. Pour in the vanilla extract and vegetable oil and pumpkin purée . Beat together till well mixed.

6.Add in your flour mixture all at once. With a spatula or wooden spoon, mix all together. Batter has a dense texture.

7. At this point, add in your diced and grated apples along with the chopped walnuts.Fold and mix into the batter till all is well combined.

8. Spoon the prepared batter into the tube pan. With a spatula, spread batter out evenly. Bake at 350 F (175C) for 55-60 minutes, or until the toothpick comes out clean.

9. Cool cake for about 10 minutes before releasing and placing onto a wire rack for complete cooling.

Can also be served with a dollop of whipped cream over the cake slices.

Refrigerate any leftover in an air tight container for up to one week.

Wishing you all a cozy and colourful autumn!
