Pappardelle with Roasted Peppers and Olives - Pappardelle con Peperoni Arrostiti e Olive

Colourful, fleshy, lively … peppers are the most versatile and widely used summer vegetable in the Italian kitchens.


Today, the tasty summer dish that we will be preparing is, pappardelle with roasted peppers, green and black olives.


A simple, easy, quick and economical dish with a Mediterranean flavour, dedicated to those who, like us, enjoy eating peppers.


By roasting the peppers in the oven, they become soft, making them easy to digest, due to the fact that the skin is removed.


This easy delicious flavourful dish, can be made with any type of long noodles or short pasta. Bottom line, whatever pasta you have in your pantry.


PSST … Although this dish is considered a summer pasta dish, it can be made anytime of the year !


INGREDIENTS: Serves 4

1 lb. (approx 500 g) pappardelle

Medley of colourful roasted peppers (cut into strips)

Juices of the roasted peppers

15 ozs (400 g) green olives (pitted)

15 ozs (400 g) black olives (pitted)

2-3 garlic cloves

1/4 cup (60 ml) olive oil or any neutral oil (plus extra drizzle over serving dish)

Fresh parsley for garnish (optional)


NOTE: We already had homemade jarred roasted peppers in the fridge. You can buy store bought roasted peppers, which are only made with red peppers.


DIRECTIONS:

1) Start by putting to boil a big pot of salted water for the pasta.


2) In the meantime, cut your roasted peppers into strips. (Do not discard the juices)

3) In a large deep skillet, over stovetop, on medium heat, add your olive oil. Bring Add your olives, sliced roasted peppers with their juices, & your garlic cloves. Let simmer to marry the flavours. Remove the garlic cloves once they have released their flavour.

4) Cook your noodles 2 minutes less than package’s instructions. Stir occasionally. Reserve some of the pasta water.

5) Add the noodles into the skillet. Stir to combine well. Cook together for about 1-2 minutes. If needed, add some of the reserved pasta water to adjust texture.

6) Plate and serve, topped with an extra light drizzle of olive oil.


It’s that simple, quick and easy to prepare!
