Oven Roasted Rabbit with Colourful Roasted Vegetables- Coniglio al Forno con un Contorno di Legumi

Oven roasted rabbit is a quick, simple and easy meal to prepare. It has an incredible rustic & savoury taste. This is a classic Italian Sunday dish, served as a second course.
However; in our household, there are times that we serve it as a main meal.
We will present this delicious oven roasted rabbit with rosemary and white wine, accompanied by an equally delicious side dish of a colourful medley of roasted vegetables. When it comes to oven roasting your vegetables, selecting the right vegetables is the key. For best results, ensure that the vegetables are firm & fresh.
Follow our easy step by step instructions and this meal with certainty turn our perfect !
INGREDIENTS: Rabbit (Serves 6)
6 pieces of rabbit
1 cup (250 ml) white wine + more to deglaze if needed
4 garlic cloves 🧄
3-4 rosemary stems
1 tbsp. (15 g) paprika
Olive oil
Salt & pepper to taste
INGREDIENTS: Our choice of vegetables
NOTE: Cut all the vegetables into uniform pieces
3 medium size zucchini
3 medium size carrots 🥕
3 celery stalks
1 red bell pepper
1 yellow bell pepper
1 orange bell pepper
2 medium size onions
1 1/2 lb. (.7 k) little potatoes 🥔
Olive oil
Salt & pepper to taste
DIRECTIONS: Rabbit 🐇 - Oven temperature 400F (200C)
1) Place your pieces of rabbit in a mixing bowl. Add all your spices & a generous drizzle of olive oil. Give it a toss. Make sure each piece is well coated.


2) Drizzle more olive oil into your baking dish. Transfer the coated rabbit pieces. Add the garlic cloves & rosemary stems. Pour in the white wine. Cover dish with aluminum foil.



3) Place into a preheated 400F (200C) oven. Bake for 1 1/2 hours or until the meat is tender.
NOTE: Check at the halfway mark. Turn over the pieces of rabbit.


4) While checking on the rabbit, if needed add more white wine to deglaze the bottom of the baking dish. For extra flavour,mash the garlic cloves with a fork & leave them to dissolve. Now remove the aluminum foil at the last 30 minutes of baking. This will give the rabbit that extra beautiful roasted look, not to mention that delicious taste.

DIRECTIONS: Vegetables - Oven temperature 400F (200C)
NOTE: It took us 40-45 minutes of baking/roasting with our choice of vegetables
1) Wash your vegetables. Cut them into uniform pieces to ensure even cooking.
2) In a large bowl, toss the vegetables with a generous drizzle of olive oil to prevent them from sticking. Season with salt & pepper.

3) Spread the vegetables in a single layer on a parchment lined sheet pan. Place in a preheated 400F (200C) oven, uncovered. Stirring occasionally until they are tender & the edges are lightly browned.


4) The exact cooking time will vary, depending upon the size & the vegetables of you choose. So keep an eye on them to avoid overcooking.

5) Do not throw away that delicious liquid gold left over from cooking the rabbit, simply pass it through a sieve over a gravy boat an use it to drizzle over your dish for added aroma and flavour.
