Deliciously Creamy Mango 🄭 Cottage Cheese Ice Cream šŸØ

Low in calories and high in protein, cottage cheese is the perfect base for a delicious ice cream!


add some mango for natural sweetness and explosion of flavours with added fiber and you have a decadent guilt free dessert! YUM!!!


Ingredients

1 container of 500grams cottage cheese 2% OR 4%

1 tbsp vanilla extract

3 cups frozen mango

1 cup diced mango for added texture and for topping

optional: 1-2 tbsp of maple syrup for added sweetness


Directions

add cottage cheese to a food processor- add the vanilla and gradually blend the mango in until it is fully smooth (3-5 mins)

afterwards- add into a freezer safe bowl and layer in some diced mango for texture.

if this is done straight away with fully frozen mangos - as soon as it is blended you can eat it right away as a soft serve-


if not, simply place it in the freezer for a good 2 hrs for the perfect ice cream rich and creamy consistency!

if frozen overnight- you need to thaw it 2 hrs before eating to get it thawed to be scooped- reminder, this is all natural and not loaded with fillers and gums that makes it scoopable within minutes- this is worth the wait šŸ˜‹


you can make an array of combinations!!!


avocado and coco powder

strawberries,cream cheese & graham crackers

lemon zest with blueberries

Coco espresso

orange zest and frozen orange slices

etc etc etc


for best consistency: always using frozen fruits that are thicker in consistency: ex: bananas-avocados-mango-pinneapple for the base and anything more watery use as a topper or chopped and folded into the ice cream etc


because if you use frozen berries-they contain more water- so it would crystallize more and not be as rich and creamy.... but if you really want a berry ice cream it is possible, in this case i would suggest using fresh berries! blending them and also reserving some diced for added texture- or you can also make a coulis to drizzle in before freezing! Yum
