🍋 Creamy Italian Lemon Granita / Italian Lemon Shaved Ice 🍋


Ingredients

Zest of 2-3 lemons (medium sized)

Juice of 2-3 medium lemons 200 ml

Sugar 160 grams

Water 160 ml

Freezing Cold Water 200 ml

1 pasteurized egg white 30 grams


Directions


1) Prep the lemon zest and juice prior to beginning, this will ensure a smooth quick process to get this mixture in the freezer in 5 mins time.

2) over medium heat in a saucepan, add your water and sugar and let the grains fully melt. Remove from heat and let semi cool.

3) add cold water to the mixture, along with lemon zest and juice and stir and set aside.

4) in a blender add the egg white and blend for about 1 min until thickens.

5) transfer liquid into a picture with a spout for easier pouring. Pour mixture into the blender with the egg white and blend for about 1-2 mins until which and frothy.

6) Pour mixture back into the picture with pouring spout and give it a mix with a wooden spoon to combine the separation that happens from the liquid and egg white fluff.

7) pour into ice cube tray for easier and quicker freezing. Place in freezer until frozen (about 2 hrs max all depending the size of your trays etc) Note this will Never fully freeze due to the egg white... meaning within a few mins time it will be perfect texture to scoop out when removed from freezer.

8) Choose to add frozen ice cubes to a food processor to remix and get texture desired or simply add ice cubes to a chilled goblet and wait a few mins until it softened up to enjoy!


Garnish with a sprig of mint or lemon peel if desired and enjoy!


This shaved ice is creamy, rich and pucker up as it bursts with lemon flavour! a perfect summer nights treat or have it in between meals as a pallet cleanser!


You can also add some spumante (champagne poured over top for a dinner nights treat) !
