Christmas Chocolate Salami Logs šŖµ

Chocolate salami is an Italian dessert made from cocoa, broken biscuits, butter and sometimes alcohol such as port wine or rum.
The dessert became popular across Europe and elsewhere, often losing alcohol as an ingredient along the way. Here is our spin on it. š
INGREDIENTS: White Log
600 grams white chocolate
150 grams of social tea biscuits
100 grams pistachio
108 grams dried cranberries
Powdered sugar & Cocoa powder for dusting
INGREDIENTS: Semi Sweet Chocolate Log
600 grams semi sweet chocolate
150 grams social tea biscuits
100 grams roasted almonds
128 grams dark cherries (optional they can be soaked in an alcohol of choice ⦠ex: brandy, marsala, rhum etc)
Powdered sugar for dusting
DIRECTIONS
1) Prepare your station: start by crushing the social tea biscuits and measuring out your add ons.

2) Over a double boiler - melt your chocolate (white or dark)


3) Add ingredients gradually to melted chocolate, mix well to coat all.




4) Place plastic wrap on counter, followed by parchment over top.
5) Lay chocolate goodness on parchment and begin to shape and form into a log.





6) Roll parchment over log, followed by a tight roll of plastic wrap. Give it a few spins for tightness and lay on baking sheet to place in fridge to harden up. 1-2 hrs.
7) Unravel the log and dust it with powdered sugar (and or cocoa depending white flavour profile you are making) rub it in with your hand for a more realistic look. Then slice and add to a cookie platter to serve.




š«¶š¼ Have fun with toppings of choice! For a creamier, smooth texture you can add some butter to the chocolate while melting it.
