Biscotti Baci di Dama 💋 (Ladies Kisses Cookies)/Italian Chocolate Hazelnut Cookies.

This easy and simple recipe is an eggless based dough made with some finely ground roasted hazelnuts.
Two delicious melt in your mouth hazelnut cookies held together with hazelnut spread or melted chocolate. The chocolate filling represents the “kiss” that holds together the cookie. Hailing from the Piedmonte region of Italy 🇮🇹, land of hazelnuts and chocolate.
INGREDIENTS:
Makes approximately 80 single cookies (40 assembled cookies)
1 cup (100 g) finely ground roasted hazelnuts
1 cup (120 g) all purpose flour
1/2 cup (80 g) regular sugar
1 stick or 1/2 cup (113 g) unsalted cubed cold butter
1 teaspoon (5 ml) almond extract (or vanilla)
Hazelnut spread or melted chocolate for binding
DIRECTIONS:
1) Place hazelnuts in a preheated 350 degree Fahrenheit (180 C)oven for approximately 7 minutes. Cool completely. Place between a clean dish towel. Give a rigorous rub to remove the skin. add to a food processor, until finely ground.






2) In a large bowl, whisk together the dry ingredients, mix well. Add the extract of your choice and the cold butter. Coat the butter with the dry ingredient. Work well with your hands till you form a round dough. Cover with plastic wrap. Place in the fridge to chill for one hour.











3) Scoop dough with measuring size 1/2 teaspoon and roll into tiny balls. OR roll out the dough. Slice sections with a pastry cutter into small cubes and roll the cubes into tiny balls.


4) Place on a parchment lined baking sheets and into the fridge for one hour before baking. If pressed for time, place in the freezer for 10 minutes.

5) Bake in a preheated 350 degree Fahrenheit (180 C) oven for 10-12 minutes, or until the bottom of the cookies turn golden brown.

NOTE: The cookies will be soft to the touch, but will form a light crispy exterior as they cool.


6) Once completely cool, spread a bit of hazelnut spread (or melted chocolate) on the flat side of the cookie. Gently place another flat sided cookie over the cookie. Press slightly together to form a sandwich.



TIP: If using melted chocolate, use a piping bag to do a quicker and neater job.
