Apple Fritters (Soft,Pillowy and so Delicious!)

Let's Begin!
DRY MIX INGREDIENTS
1 2/3 cup of all purpose flour
3 tbsp of sugar
2 1/2 tsp of baking powder
a pinch of salt
3/4 tsp of cinnamon
WET MIX INGREDIENTS
Neutral oil for frying
2 apples (any type)
2 tbsp of sugar
1/4 tsp of cinnamon
2 large eggs
1/2 cup of milk (any kind)
2x 1 tsp vanilla extract
the zest of 1 whole lemon
the juice of 1 whole lemon
2 tbsp of melted and cooled butter
DIRECTIONS FOR WET MIXTURE
1) Wash, peel and grate 2 apples


2) Add the zest and juice of 1 whole lemon and give it a good toss to coat to insure the apples do not brown.


3) Add the cinnamon, sugar and butter and vanilla extract and mix it all together and set aside.



4) break open 2 large eggs and add the vanilla extract and give it a quick whisk. (set aside)



DIRECTIONS FOR DRY MIXTURE
1) in a large bowl add the flour, cinnamon, sugar, baking powder and salt and give it a good whisk to combine.


2) Now it's time to add all the ingredients together, add your wet into the dry and give it a good mix with a spatula until it is well combined but making sure not to over mix.




3) Now it is time to fry them up!. In a large deep frying pan over medium high heat, heat up some oil (neutral oil with a high smoke point).
TIP: Test the oil is hot by using a pea size amount of batter first to see if it floats to the top. OR use the tip of a wooden spoon to see if it bubbles around the handle.
4) with two tea spoons- scoop a dollop of batter (about a golf size ball) and gently lower it into the frying oil. When they float to the top that means they are done and you can simply just continue to cook the for a few more seconds to achieve the colour of golden you are desiring. (this takes all of 2 mins max)


5) scoop them out with a slotted spoon or spider ladle and place ion a wired rack thats sitting on top of a baking sheet to drip off excess oil.

Once cooled you can eat them plain, drizzle with icing sugar or toss them in cinnamon brown sugar or even drizzle with icing sugar (which is powdered sugar mixed with milk).
If dunking in icing, please place them yet again on a wire rack over a sheet pan to let the excess drip and let it set for 10-15 mins forst so the icing has time to form a skin.




These are pillowy soft, moist with the grated apple yet so fluffy like mini donuts! The perfect distribution of apple flavour that will burst in your mouth! The kids will LOVE these!
