A Decadent Cheesecake Filled with a Caramelized Apple Center, Topped with a Cinnamon Toffee crumble.

Start by greasing and lining with parchment paper your 9x9 spring form pan and then set aside.

INGREDIENTS FOR THE CRUST
1 pack 200 grahams of graham crackers crushed
1/2 stick (58 grams or 1/4 cup) of melted and cooled butter
DIRECTIONS FOR THE CRUST
1) In a food processor crush the graham crackers to a fine texture.
2) Once done add to a bowl and drizzle in a little at a time your melted and cooled butter, gradually mix until it reaches the consistency of wet sand, Until you can squeeze it with your hands and the mixture will hold a shape.
3) now fill in your pan and press down with a measuring spoon to level our the crust to make it as even as possible. Reserve the left over crumbs for added toppings for later.




INGREDIENTS: CARAMELIZED APPLE FILLING
3 XL Large apples or 4-6 small apples
1 small lemon
1cup of brown sugar (180 grams)
3-4 tbsp of cubed butter
1 tsp vanilla extract (5 ml)
1 tbsp corn starch (10 grams) :optional if you want to thicken sauce faster to keep the apples more ripe with a bite to them.
DIRECTIONS: CARAMELIZED APPLE FILLING
1) Start by peeling , coring and slicing your washed apples and tossing them in some lemon juice.
2) Then, over medium heat, add the butter.
3) Once butter is melted, then add the apples and gently toss to coat.
4) Now add your brown sugar and vanilla extract and again mix well.
5) Cook over medium heat until it bubbles and begins to thicken.
6) If you want to keep your apples with a bite to them then I suggest you add the corn starch as we did, You will see that we added 1 Tbsp of corn starch to thicken the sauce faster so as not to loose the bite of the apples. (that is a personal preference). Once done, remove from heat and set aside.










INGREDIENTS: CHEESE CAKE ***Note*** that this recipe for the pie filling is tripled! so if you want a smaller cake simply reduce the measurements. and only use 1 block of cream cheese , 1 can of condensed milk , 1 tsp of vanilla and 1 tbsp pf lemon juice.
3 blocks of softened cream cheese (each block is 8 oz or 226 grams)
3 cans of condensed milk (each can is 300 ml)
3 tbsp of fresh lemon juice (45 ml)
3 tsp of vanilla extract (15 ml)
DIRECTIONS: CHEESE CAKE
1) Using a hand mixer or stand mixer combine 1 block of cream cheese well with 1 can of condensed milk, continue to add another block and can until all 3 blocks and cans have been well combined. Then add your lemon juice and vanilla extract and mix in well.



INGREDIENTS: CRUMBLE TOPPING
1 cup of flour (120 grams)
1/2 cup of brown sugar (180 grams)
a dash of cinnamon
a pinch of salt
about 4-6 tbsp of melted and cooled butter (use only what you need)
DIRECTIONS: CRUMBLE TOPPING
whisk together dry ingredients, and then drizzle in the melted and cooled butter until you get a good consistency. You may not need all the butter....



👩🏻🍳Now that everything is made and prepped! it is time to layer the cake.
1) add 1/3 of the cheesecake filling and then spread out with a spatula evenly to coat all edges.
2) add a good layer of caramelized apple filling.
3) add more cheesecake filling overtop (another 1/3).
4) add the remainder of caramelized apple filling.
5) add the remainder of the cheesecake filling and then top with your crumble as well as some of the left over graham crust. Bake at 350 FH (175 celsius) for 60-75 mins, the center should have a slight jiggle while the outer circle should be more set. When the cake cools and chilled it will fully set not to worry. If you feel the top is browning quicker while the cake is baking, cover the top with foil.
6) Once fully baked, leave it to cool before placing in the fridge for a min of 4-6 hrs for a good enough set, but we could not stress enough! overnight is always best !! trust us.
7) Once set, decorate with extra toppings if desired, we drizzled with caramel sauce and added some pecans and crushed walnuts for added flavours. We set that a quick 30 mins in the fridge before we sliced it up and enjoyed ;)










This is rich and decadent with a burst of apple pie fall flavours with the decadence of a creamy cheesecake! what a combination.
