3-ingredient Gluten-free Walnut Cookies: Delicious Dolci Di Noce Recipe!



These easy walnut cookies are literally made with a handful of simple ingredients that you probably already have in your pantry. This Italian “snowball” cookie recipe has a lightly crispy bottom, however; at the same time are divinely soft and chewy that almost melt in your mouth. Festive and delicious 😋!


Simply store in an airtight container, at room temperature for up to 5 days, or in the refrigerator for up to 12-14 days. You can also freeze them in an airtight container for up to 3 months. Should you have any leftover walnuts (or any other type of nuts), refrigerate or freeze them. This will keep them fresh and prevent them from going rancid.


INGREDIENTS: Makes approximately 35-40

cookies 5 cups (440 g) finely ground walnuts

4 egg whites (room temperature)

1 cup (200 g) sugar Garnish: walnut kernels, green and red candied cherries

OPTIONAL: 1 cup (100 g) powdered sugar if you want to roll the cookies in powdered sugar


DIRECTIONS: Oven temperature 350 Fahrenheit (180 C) & grease and line with parchment paper a baking tray.







1) In a food processor, finely grind the walnuts. Set aside.





2) In a large glass mixing bowl, start by beating the egg whites on low/ medium speed and slowly increase to high speed. Gradually add the sugar. Beat till the egg whites look like shiny melted marshmallows with stiff peaks.








3) In increments of 3-4 times, add the ground walnuts into the egg whites, and gently fold them in, till all is well incorporated.









4) Roll into balls by using a small ice cream scoop or a teaspoon(we eyeballed them and used our hands) and gently roll them in the powdered sugar. Place them on a baking sheet lined with parchment paper.




5) Garnish with walnut kernels, green and red candied cherries (or other candied fruits to reflect the holiday)





6) Bake in a preheated 350 Fahrenheit (180C) oven for 25-30 minutes, or until the edges and the bottom of the cookies are lightly golden.



NOTE: Once baked, the cookies will have a very soft to the touch. Let cool for 10-15 minutes before removing them off of the baking sheet.
