The Ultimate Cherry Clafoutis: A Decadent French Delight 🍰🍒

Born and raised in Montreal, Quebec (Canada) 🇨🇦 you come to taste and embrace some of the most delicious French desserts. Today, we would like to share with you, one of the most popular rustic French dessert, Clafoutis.
This sweet, uncomplicated dessert is traditionally made with cherries. However, any type of seasonal fruit works just as well. Any type of berries (or a mixture of berries),plums, peaches 🍑, apricots, figs, etc…
You may also use frozen cherries 🍒, or any other choice of frozen fruits.
The texture of the batter resembles that of a crepes/pancakes and bakes to a texture of a custard. If you have never made clafoutis before, you’ll be delighted to find out how super simple and easy it is to assemble. 🍒 🥧
INGREDIENTS: Fills a 9”-9.5” pie dish (23 cm - 24 cm)
1 1/4 lb. of cherries (570 g)
3 eggs
3/4 cup sugar (145 g)
1 cup milk (205 ml)
1/2 cup 35% cream (190 ml)
1 tablespoon vanilla extract (12 ml)
3/4 cup sifted all purpose flour (120 g)
Powdered sugar for dusting
DIRECTIONS: Preheat oven to 375 F (190 C)
1) Generously grease your pie dish with butter 🧈 and lightly coat with sugar
2) Rinse cherries, remove stems and pits.
NOTE: WE USED FROZEN CHERRIES 🍒 in this recipe. No need to thaw.
3) Place cherries in a single layer in the pie dish and set aside.
4) In a large mixing bowl, mix eggs, sugar, milk, cream and vanilla extract. Whisk till well blended. You may also use an electric hand mixer on low/medium setting. Slowly add the sifted flour, while continuing to mix.
5) Pour batter over the cherries, place pie dish on a parchment lined cookie sheet.
6) Bake in a preheated 375 F (190 C) oven, 40-45 minutes.
7) Cool 10 minutes before dusting the clafoutis with powdered sugar.
Et Voila ! C’est pret ! And there you have it ! It’s ready !
This dessert can be served warm, room temperature or cold.
Refrigerate any leftover for up to one week.
