Migliaccio Napoletano - Dolce di Semolina e Ricotta -a sweet ricotta semolina dessert


What is Migliaccio? It’s a delicious Italian traditional semolina and ricotta dessert cake that has a “thick pudding like texture” that originates from Naples. Migliacco has a light and delicate flavour. Compared to other desserts served during Carnevale and Easter, it’s not heavy or over sweet, which makes it the most popular dessert. This dessert is super simple, that anyone can make it without a mistake.


INGREDIENTS: 4 eggs 🥚 (room temperature)

7 ozs. (200 g) semolina durum flour

1 1/4 cup (250g) sugar

1 1/2 cup (360 g) ricotta cheese

2 cups (500 ml) milk

2 cups (500 ml) water

1/2 stick (60g) unsalted butter 🧈

1/4 cup (60 ml) limoncello

1 teaspoon (6 ml) vanilla extract

2-3 orange peels + (optional) zest of one orange 🍊

2-3 lemon peels + (optional) zest of one lemon 🍋

You will also need a 9” (24cm) springform pan


DIRECTIONS:

Oven temperature 350 FH (180 C)


1) Grease and line a springform pan parchment paper, including the sides.



2) In a medium size pot, over low/medium heat, pour milk and water. Add the butter and orange and lemon peels. Bring almost to a boil (make sure butter has melted), lower the heat and remove the peels.



3) Gradually add the semolina while constantly whisking. Cook 4-5 minutes or until thickened. Remove from heat, spread in a large flat dish. Set aside and let cool completely.








4) In a mixing bowl, using an electric mixer, beat together the eggs and sugar till light and fluffy. Add the ricotta, vanilla extract, limoncello, (optional for extra flavour orange and lemon zest.)Mix well. Spoon in the cooled semolina mixture, mixing till all is well combined.






5) Pour into the pan and place in a preheated oven for one hour. NOTE: IF TOP GETS TO DARK, COVER WITH ALUMINUM FOIL AND CONTINUE BAKING After the one hour mark, turn off the oven. Place a wooden spoon in between the door and let stand for another 15 minutes.



6) Remove and let cool completely before releasing the cake from the pan. Generously sprinkle with powdered sugar.




You make eat it at room temperature, delicious 😋 however, it’s better if you place it in the fridge at least 5-6 hours, covered with plastic wrap. It tastes best the longer it sits in the fridge.
